Double Roast Baba Ganoush

I tend to write about the food my family makes, traditional dishes that I've fallen in love with through friends and extended family, and new ideas I've come up with, inspired by Assyrian cuisine. But there is a whole list of traditional foods that I'm not used to eating homemade, which I grew up eating from restaurants. One person's restaurant food is another person's home cooking, but for my family, baba ganoush (also known as baba ghanouj) is something that we order along with falafel when we get Middle Eastern takeout, and not something we actually know how to make.

But cooking something at home that you've only eaten in a restaurant is kind of intimidating, and so I usually take on these sorts of dishes with a slightly different method than usual: researching and experimenting to figure out the best way to make them. Baba ganoush seems really simple (it's just mushy eggplant, right?), but I've discovered that there are hundreds of ways to make it, and even more ways to mess it up.

I first looked to Sami Tamimi and Yotam Ottolenghi's Jerusalem. It became immediately clear that there is no consensus on the tahini front. The dispute isn't about how much tahini you should add, but whether you should add any in the first place. According to Tamimi and Ottolenghi, some chefs claim that it's not baba ganoush without tahini, and some claim that once you add tahini, you've made an eggplant salad instead. Furthermore, some people prefer to purée their baba ganoush, while some keep it very chunky.

Ultimately, I settled on adding a small amount of tahini, because that's the kind of baba ganoush I grew up with. Tahini gives baba ganoush a creamy, emulsified texture that would be missed. I also decided to leave my baba ganoush on the chunkier side, first emulsifying everything but the eggplant, and then simply pulsing everything together a couple times in a food processor.

While we could spend all day arguing over every single ingredient in this recipe, and whether it has a place in baba ganoush (all except eggplant, of course), moisture is the main technical concern. If you leave too much eggplant juice behind, the final spread will have a watered-down flavor and a soupy consistency. Roasting them on the stove isn't enough to get rid of the moisture because when you first roast them on the stove, the eggplants basically turn into water balloons. Once you start peeling them, they start leaking all over the place. And once you cut them open, they leak even more. But even after all this organic seeping, there's still a lot of moisture left in the eggplants.

So I followed Ottolenghi's lead in Plenty, where he suggests straining the eggplant before puréeing. J Kenji López-Alt, in his really thorough and useful baba ganoush article in Serious Eats, has the clever idea of using a salad spinner to speed up the draining step, since it takes about an hour to completely strain. López-Alt also dispels the strategy of pricking holes in the eggplants while they roast, which just makes a big mess and doesn't actually work. After reading this, I left my eggplants un-perforated, but I decided to do something besides using a salad spinner, though along the same lines: in addition to roasting the eggplants whole and straining them for a few minutes, I also split and broiled them.

Broiling the eggplant after roasting and straining does two things: it gets rid of any excess moisture, and it adds even more roasted flavor. It takes much less time than waiting for the eggplant to fully strain, and it adds so much delicious flavor in the meantime. The already browned exteriors are placed face-down on the sheet pan, so that the watery insides are exposed to the broiler. The cut-sides become just as roasted as the outsides, and they dehydrate in the process.

To preserve even more roasted flavor, like Ottolenghi and Tamimi, I opted for peeling instead of scooping the whole roasted eggplants. It seems like the kind of thing that would take forever, but I timed myself, and it took me 6 minutes. By peeling away the burnt skins, you leave behind the beautifully browned eggplant skin. Look at the photo above and just try to tell me that it wouldn't break your heart to scoop the eggplants out and miss some of that browned stuff, because it's breaking my heart just thinking about it.

double roasting the eggplant

  • 3 pounds baby Italian eggplants *

  • 1/2 teaspoon kosher salt

  • 2 1/2 tablespoons olive oil, divided into 1 tablespoon and 1 1/2 tablespoons

  1. Leave the eggplants completely whole and roast them (un-greased) on a gas stove over medium-high heat for about 5 to 10 minutes, rotating them occasionally, until the eggplants are very charred. **

  2. Immediately after removing from the stove, peel off the charred skins in strips. Hold them by the stems and use a fork or paring knife to get the strips started. Feel free to leave a few bits of charred skin behind.

  3. Preheat the broiler to high and grease a sheet pan with 1 tablespoon oil.

  4. Split the eggplants in half lengthwise, remove the stems, coat with 1/2 teaspoon kosher salt, and place them in a colander over the sink or a bowl for 10 minutes (prep the rest of the below ingredients while you wait).

  5. Once the eggplant halves have drained for 10 minutes, place them cut-side-up on the sheet pan. Drizzle with the other 1 1/2 tablespoons oil. Broil until nicely browned. ***

  • 2 cloves garlic

  • 3 tablespoons tahini

  • 1/4 cup lemon juice

  • 1/4 to 1/2 teaspoon kosher salt (to taste)

  • 1 tablespoon extra virgin olive oil

  • 1/4 cup minced parsley

  • 1 tablespoon extra virgin olive oil (for garnish)

  • 1 tablespoon minced parsley (for garnish)

  1. Using a food processor, finely mince the garlic. Add the tahini, lemon juice, and salt and process until everything is well-combined. Then slowly drizzle in the 1 tablespoon of olive oil until everything is emulsified.

  2. Scrape the roasted eggplant into the food processor and pulse 2 or 3 times until the mixture forms a chunky paste. Remove the baba ganoush to a bowl, allow it to cool, and then gently fold in the parsley.

  3. Garnish with the olive oil and parsley and serve at room temperature

* This is about 7 small Italian eggplants, but you can substitute an equal weight of big eggplants. If you do this, it'll take much longer to roast them and the final dish will not have quite as much roasted flavor, but it will still be very good. Visit J. ** If you don't have a gas stove, you can use a grill or broiler. Use the highest heat possible and (if you're broiling), use the shelf closest to the broiler—you really want the skins to burn. You need either a gas stove or a very hot broiler/grill to make this recipe, because the eggplants will turn to mush before they are peel-able if the direct heat is not hot enough.
*** Depending on your broiler, this could take anywhere from 3 to 15 minutes. Keep a close eye on it.

Tabbouleh has become so popular in the United States, it's easy to forget about all the other classic Middle Eastern salads. And that's a shame, because as much as I love tabbouleh (and I really do love it. I recently revisited classic tabbouleh and shared my recipe for ruby fennel tabbouleh, and later this summer, I'll introduce two more variations: tabbouleh verde and tabbouleh mergherita), there are many more Middle Eastern salads out there, some named and some unnamed.

Don't forget about classic fattoush (or my kale fattoush), beet salad, carrot salad, lentil salad, and many more (if it's something you could eat in a salad, then there's probably a Middle Eastern salad for it). But if I had to pick one that's really essential to most Middle Eastern cuisines, it would be Jerusalem salad. Israeli and Palestinian chefs, Yottam Ottolenghi and Sami Tamimi, explain this dish's ubiquity:

“It is impossible to count the number of cultures and subcultures residing in this city. Jerusalem is an intricate, convoluted mosaic of peoples. It is therefore very tempting to say there isn’t such a thing as a local cuisine. However, if you take a step back and look at the greater picture, there are some typical elements that are easily identifiable in most local cuisines and crop up throughout the city. Everybody, absolutely everybody, uses chopped cucumber and tomatoes to create an Arab salad or an Israeli salad, depending on point of view."


Jerusalem salad is dead simple; you dice up cucumbers and tomatoes (with a few other veggies, depending on who's cooking), you dress it simply, and you serve it. But there's one small problem I've always had when making Jerusalem salad, which is moisture. These ingredients have a ton of water in them, and when you add salt and dressing, they start leaking that water everywhere, and after about 5 minutes, the dressing is completely watered down and your veggies are swimming in a sea of diluted lemon juice. You could add extra lemon juice to compensate, and just use a slotted spoon to serve it, or you could leave the salt out. But my favorite solution is to macerate the veggies with some salt for about an hour, strain them, and then dress the salad. The veggies maintain their crunch, but break down just the slightest bit, and the dressing stays in place and does its job effectively.

  • 5 Persian cucumbers

  • 1 yellow or orange bell pepper (can substitute red or green)

  • 5 roma tomatoes

  • 1/2 teaspoon fine sea salt

  • 1/4 cup minced red onions (from about 1/4 of a medium onion)

  • 3 tablespoons extra virgin olive oil

  • The juice of 1 lemon

  • 3 tablespoons finely minced parsley, divided into 2 tablespoons and 1 tablespoon

  • More salt to taste (optional)

  1. Small dice the cucumbers, bell pepper, and tomatoes, and combine in a big serving bowl.

  2. Toss together with the sea salt and refrigerate for an hour.

  3. After an hour has gone by, strain the salad through a fine mesh colander, discarding the liquid. Do not press the salad against the colander, but gently shake the colander a few times to drain away the excess liquid. *

  4. Place the salad back in the bowl, add the red onion, extra virgin olive oil, lemon juice, 2 tablespoons minced parsley, and more salt to taste (optional), and toss to coat.

  5. Garnish with the 1 tablespoon minced parsley.

* To make ahead, strain the salad after an hour, store in the refrigerator for up to 6 hours, and then strain again right before dressing and serving. You can even do this a day ahead of time, but the vegetables will soften significantly and the texture of the final dish will be very different.
